Origin: Fugian Province, China

This is a very light, gentle sweet oolong that rewards you with a hint of dry sherry flavour and an undertone of pepper. Intriguing and delicious with no astringency.

Brewing: water 6 oz. 195F / leaves - generous teaspoon / steeping - 1-2 mins. Hint: Best brewed in a gaiwan doing multiple short infusions. Give the tea a quick rinse before brewing to 'wake up' the leaves. Try 1 minute for the first infusion, 1 1/2 min for the second and 2 minutes for the third.
